Eating In

One of me and D's favorite things to do is cook together (while listening to our favorite 90's music).  We have been trying to eat out less (which is SO HARD thanks to El Gallo Giro) which means we get to cook more. We have been addicted to the Sweet & Sour Chicken recipe so I thought I would share it. Seriously, this stuff is so good! Not deep fried, lots of veggies, and just the right amount of tang. 

                                 

Ingredients:
2-3 cooked chicken breasts
1 can chunked pineapple
1 c. sugar
2 tbls. cornstarch
1 tbls. soy sauce
3/4 c. vinegar
1 chicken bouillon cube 

Veggies: (your choice)
1 green bell pepper diced
1 red bell pepper diced
1/2 c. carrots

Directions:
Drain pineapple juice into a measuring cup, add water to make it 1 1/4 cups of liquid. In a sauce pan combine sugar and cornstarch, mix it well before adding pineapple mixture. Add the pineapple mixture, vinegar, soy sauce and chicken cube. Bring to a boil, stirring constantly until thick. 

Add in chicken chunks, veggies and pineapple pieces. Make sure to dice up and saute the veggies before adding them to the mixture. 

Serve over rice. Enjoy!
